Elaboration: The grapes were destalked and lightly crushed into stainless steel tanks. Each grape variety and respective vineyard was fermented separately. The must was inoculated with Rhône yeasts and pump-overs were done up to 4 times a day during fermentation. After alcoholic fermentation, the wines were racked to tanks and barrels for malolactic fermentation. The wine was then matured in both tanks and barrels prior to blending, stabilization and bottling.

Tasting Notes: Red currant, plum and peppercorns on the nose while the youthful palate is rich with generous berry fruit and spice, balanced with integrated oak nuances. The palate is smooth with firm tannin a long fresh finish.

PRODUCER BACKGROUND

The legend goes that some errant members of Fairview?s long-established goat herd once escaped from their paddock into the Fairview vineyards after Charles Back?s young son Jason accidentally left the gate open. The little group happily roamed among the vineyards, showing rare discernment by selecting some of the ripest berries from the vines. Inspired by this tale, we now use these berries in the making of our Goats Do Roam wine. Highly drinkable and superb in quality, the Goats Do Roam range is an intriguing mix of southern French and Italian style blends, rich in complexity and at value-for-money prices. Charles Back abandoned the estate wine concept in the 1980s, choosing rather to ?go where the terroir is?. Today, they are one of the few farms that proudly own all of their own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch.
