Winemaking

From the freshly pressed must of Moscato grapes and a small addition of Tempranillo red wine, alcoholic fermentation starts slowly, at controlled temperatures, in stainless steel tanks until 5-5.5% alcohol is reached.  The tanks are then hermetically sealed, and a second fermentation – called “prise de mousse” – is started at a lower temperature.  When the alcohol reaches 7%, we stop the fermentation by reducing the temperature to 30F.  The wine is then filtered to remove any remaining yeasts and transferred to a sealed, controlled temperature tank and prepared for bottling.

On the palate, the texture of this light-footed spumante is wonderfully crisp. Due to its lively fruit acidity, the Cuvée Privée Spumante extra dry presents itself impressively fresh and lively on the palate. In the finish, this Spumante from the wine-growing region of Veneto finally delights with a beautiful length. Once again, hints of cherry blossom and lime appear

Made from grapes cultivated without usage of chemical product nor synthetical fertilizers, it’s produced from a vinification kept separate from other processes. A sparkling Prosecco with a persistent perlage, it merges delicate fragrances of acacia blossoms and strong tastes of golden apple, pineapple and orange.

Ripe grapes from the hillsides of Valdobbiadene in Northern Italy are fermented into fresh white wine. Then a secondary fermentation is done in tank for a refreshing effervescence that brings it all to life. Apple, mineral and vanilla nuances tickle the palate and since its Brut style it finishes very dry and clean. This wine holds no pretensions of being a Champagne replica. It stands on its own as a delicious and tremendous value. The 2019 Ultimate Wine Challenge said “Fresh, summer aromas of green grape, honeydew, and golden pear, the palate yields more subtle notes of kohlrabi and clean, green grape flavors. The mousse is creamy and the wine finishes clean, making it an ideal candidate for a spritz.”

COLOUR
Bright pale straw-yellow; a fine, clear mousse with a very delicate perlage.

BOUQUET
Attractively intense; very fruity and aromatic, with hints of wisteria flowers and Rennet apples.

FLAVOUR
Very well-balanced and appealing, with the extremely delicate almond note that is typical of Glera grapes.

SERVING TEMPERATURE
Serve at 5° – 7° C. (41° – 45° F.).

FOOD MATCHES
An excellent aperitif, it can also be served throughout the meal – including dessert – as long as the dishes are not too strongly flavored.
